1Spiral hams are a delightful Easter treat, but that is a whole lot of protein to move through! Here is an idea to help you use those tasty leftovers the next time you want to have some people over. The best part it is you can use the portion of the ham that has not been sliced.
Remove all of the meat you can from the ham bone (save that too for a tasty soup or delicious greens another time). Wrap the meat well and freeze in a freezer safe storage bag having removed all of the air which will damage the integrity of the meat. Most premium hams will freeze well for this, but heavily processed hams with a lot of added water and carrageenan, like those in most deli meats-will not.
A day or two before you're having company pull the ham from the freezer and use it to make a tasty ham salad!
Ham Salad yield: @ 1 quart
4C Ham (chopped in food processor)
1/3C Onion, minced
1Tbsp Dijon mustard
1/2C Cream cheese, softened
2tsp Franks Red Hot
2tsp Worcestershire sauce
1/2tsp Garlic powder
Combine all ingredients in a small bowl and allow 1 hour for flavors to marry. Adjust seasonings if needed.
Here are some serving options for you to choose from:
1.) Place in a bowl and simply serve with crackers and/or veggies
2.) Spoon it into a greased casserole or pie dish, cover and warm it in the oven
(adding shredded cheddar on top is a bonus!)
3.) Spread it between rye, white or sourdough to make finger sandwiches
4.) Use it as a filling for the cheddar biscuit tart shells shown above! That's how I serve mine :)

Cheddar Biscuit Tart Shells yield: @ 36 pieces
1# Biscuit mix, prepared
2oz Cheddar cheese, shredded and diced
1/8tsp Onion powder
1/8tsp Garlic powder
1.)Combine all ingredients and work into a dough ball. Roll out thin with rolling pin. Using a small biscuit cutter, cut into small, thin circles, and tuck into the fluted tart pans.
2.) Dock the bottom of the tarts with a fork and bake @350. Oven cook times will vary depending on the model so check on your tart shells after 9 minutes. Remove from pans and cool on a baking rack. Store in airtight container once cooled until service. *Pop in the oven for a moment before filling shells to crisp them up a bit if you like and garnish with fresh diced chives. Enjoy!
